Happy Memorial Day Friends!
I’m sure you are all out having some sort of barbecue or get-together, even if the weather has been a bit touch-and-go as of late.
Seriously, how do we go from 88 degrees with 100% humidity to 54 degrees and bone-chilling winds?
But the weather appears to be returning to normal here in NJ, whatever we end up calling normal in this state anyway. I hope at this point that I am out grilling up burgers and hot dogs, but I wanted to ensure you got your weekly muffin fix before I went out to enjoy the little sunshine I could find.
Did your mom, or grandmother, have an “everything but the kitchen sink” recipe? Either for cookies, or pasta dishes, I think every family has one. It’s one of those great go-to recipes for when you have a million little odds and ends in the pantry that you’re not sure what to do with, but can’t bear the idea of throwing out.
My pantry happened to be full of little bags of leftover chocolate chips, shredded coconut, oats, and brown sugar.
Naturally I went out and bought new ingredients and supplies when I moved to my new home, but I couldn’t think of just tossing all these perfectly good pantry items.
But I did end up tossing them…
into these muffins!
Imagine your favorite oatmeal cookie: soft, chewy, perhaps filled with chocolate chips, then imagine it with every other sweet ingredient you could have stashed away somewhere.
That’s what these muffins are. A perfectly hearty, breakfast version of those cookies.
Yes I said breakfast: if those granola bars with the chocolate chips and mini marshmallows count as breakfast, then these absolutely are part of my balanced morning.
Just in case you were a tad concerned with the sugar content, you’ll be happy to know there’s plenty of fiber from both the oats as well as whole wheat flour.
See? I can be
healthy less decadent from time to time. 😉
If you don’t like one or two of the ingredients I’ve included, you can easily switch them out for you or your family’s favorites. Butterscotch chips, hazelnuts, walnuts, dark chocolate, PB M%Ms, even raisins would work splendidly in this recipe.
Like I said, it’s everything but the kitchen sink…so use this recipe to help clean out the cupboards!
