As I’m writing this on April 1st, I am desperately hoping that the weather is not a cruel, cruel prank being played on me by Mother Nature. I’ve always been susceptible to jokes and pranks on April Fools, but for once in my life,
PLEASE LET THIS BE A SIGN THAT SPRING IS TRULY HERE!
I understand that I signed up for all the seasons when I continued to live in NJ, but this winter has been perhaps the largest prank in my life.
Oh, you like the cold, do you? You prefer to be cold rather than hot? Sweater weather is fabulous?
HOW ABOUT TRYING ON A FEW POLAR VORTICES, JESS?! HOW DO YOU LIKE WINTER NOW, HUH?
In case you missed it, that was me portraying Mother Nature as oh so slightly sadistic and insane. I definitely do not have multiple personalities that choose to randomly get into arguments with one another.
Let’s get back on track and focus on the main point of today’s post, shall we? If you’re also reveling in the spring and sunshine, let me make your day even brighter with this creamy, dreamy, Lime Coconut Smoothie!
And, well, if you’re not reveling because either a) it is not sunny or warm near you (I’m so sorry!) or b) you are part vampire and hate the sun, you’ll still adore this smoothie. How could you say no to coconut milk, lime Greek yogurt, fresh lime juice and zest, and avocado all blended together into one seriously groovy smoothie?
Easy: you don’t say no. Oh and I see you over there shaking your head about the avocado.
Avocados are the bee’s knees and deserve their rightful place in this sweetly tropical breakfast smoothie. I tried an avocado shake the other day and fell in love with the creamy texture and knew it had to go right into this recipe. Also, they are green and well, limes are green.
I love color coordinating my entire life, especially my smoothies.
Oh and if you are feeling fancy, you can coat the outside rims of a few mason jars in shredded coconut before serving your smoothies to the entire family! Though you may find yourself singing “You put the lime in the coconut…” over and over again like I did, but trust me when I say that it is completely worth it.

Lime Coconut Breakfast Smoothie
- 1/4 cup rolled oats
- 1 tbsp shredded coconut
- 1/2 cup lime Greek yogurt
- 1 cup light coconut milk
- juice and zest from one lime
- 1 avocado, peeled, pitted, and chopped
- 1 tbsp honey
- additional coconut and lime juice for rimming the glasses if desired
- Pulse oats and coconut in your blender until powdery. Add yogurt, coconut milk, and lime zest and juice and blend until you reach a uniform consistency.
- Add avocado and honey and blend until smooth.
- Brush outside of glass or mason jar with lime juice, then roll in shredded coconut if desired before pouring in smoothie and serving immediately.
