Although the last semester of my life is currently flying before my eyes, I am still technically a college student, and therefore eat like a college student.
Ramen is a major staple of my diet. Along with Easy Mac, Chef Boyardee, and grilled cheese. Lots and lots of grilled cheese.
So today, I thought I’d share with you a fantastic recipe that is so simple, affordable, delicious and nutritious, that any of my college compadres would be proud to scarf it down.
Have you all heard of Damn Delicious? Never has a site been so aptly named. I fell in love when I discovered this recipe for Nutella Stuffed Muffins. I’ve been subscribed to her RSS ever since. Though I could pretty much eat everything on her site, I’d particularly like to direct your attention to Exhibit A:
Mac and Cheese.
But not just any mac and cheese.
This is a complete meal – disguised as simple macaroni and cheese, incognito as one of the major staples of the college diet. If you can boil water, you can make mac and cheese; so why not spice it up a little?
Like throwing broccoli in the same pot of boiling water as your pasta. Brilliant. Seriously, you eliminate an entire extra pot of water and the broccoli cooks perfectly alongside the noodles.
Oh and let’s throw in some chicken for a little bit of protein, and sundried tomatoes, because why the hell not? Damn delicious indeed!
A ridiculously easy recipe that took me less than 15 minutes. 15 MINUTES PEOPLE!
College friends – this goes out to you. No longer shall you be content with microwave mac and cheese, with it’s watery sauce and bland flavors. No longer will you cry out in hunger when it fails to keep you full for longer than 30 minutes.
Rejoice my college brethren! With one pot, one pan, and a few affordable, scrumptious ingredients, you too can upgrade your mac and cheese.

Oh and for all my non-college readers: don’t fret. Just because it’s college kid approved, doesn’t mean it’s not delicious for boring, old, regular people. FYI you’re not actually old or boring. I love you all. It’s more of when I picture myself as a real person, I will be boring and old. And not in college. AGH.
But seriously: with whole wheat pasta, broccoli, chicken, cheese, and sundried tomatoes, this is one of the healthier mac & cheese options out there for the exhausted week-night cook. Healthy without having to sacrifice flavor: now that’s what I”m talking about.

Creamy Broccoli Chicken Mac & Cheese
Recipe Source: Damn Delicious
- 8 oz medium shells pasta (or other small shape pasta)
- 3 cups broccoli florets (from about 1 medium head)
- 1 can cooked shredded chicken, drained
- 1/4 cup thinly sliced sundried tomatoes
- 6 oz monterrey jack cheese, shredded
- 3/4 cup milk
- salt & pepper to taste
- Bring a large pot of salted water to a boil. Add pasta and cook according to directions on the back of the box. Add broccoli to boiling water 3 minutes before pasta will be done. Drain well.
- Heat a medium saucepan over medium–high heat. Add milk and sundried tomatoes to pan. Whisk in cheese, a handful at a time, until melted and smooth (1-2 minutes).
- Add chicken, broccoli, and pasta to pan and stir to coat, adding salt and pepper as needed to taste.
