Today, I am not going to talk to you about how Mother Nature is a jerkface and threw some snow in my face earlier this week. I am not going to talk about how Spring is a lie in NJ and how I should know that by now but I don’t. I am not going to talk to you about how the weather enjoys mocking me at every cruel twist and turn of my life.
No, today we are going to focus solely on the heaven that is the whoopie pie. Specifically, the Chocolate Chip Banana Whoopie Pies with Cookie Butter Buttercream that I made to get myself through the aforementioned weather-related grumpiness.
I forgot how much I loved whoopie pies.
HOW COULD I FORGET THAT I ADORE WHOOPIE PIES, PEOPLE?!
It’s a freaking cookie sandwich. How does one forget how rich, comforting, and overall heavenly whoopie pies are?! How does one not dream forever of fluffy buttercream, of soft, pillowy, cake-like cookies…
would it be weird to mention that the idea of sleeping inside a whoopie pie has crossed my mind? Or the idea of eating it once I woke up and realized I was inside a giant whoopie pie?
C’mon. You’ve all thought about it.
At least a few of you have thought about it. Yep. I’m going to go with that. I’m not alone in that daydream.
I also blame the sheet amount of cookie butter for that daydream. One of my co-workers bought me two whole jars of Cookie Butter from Traders Joes and I realize how late I am to this bandwagon but…
dude. Cookie butter. Why do we even need peanut butter anymore? Just use cookie butter for ALL THE THINGS.
I decided to show my love for cookie butter with these Chocolate Chip Banana Whoopie Pies: soft, cakey banana cookies, studded with chocolate chips and sandwiched together with a rich, creamy, Cookie Butter Buttercream.
What more could you ask for in a dessert?
Sigh. I really am smitten with these whoopie pies. I suddenly feel the need to make so many more of them, and try out so many more flavor combinations!
I MUST MAKE ALL THE WHOOPIE PIES FOR THE REST OF MY DAYS.
Well, at least for the foreseeable future.
We all know I can’t completely forgo other baked goods. Imagine if there were no more muffins on the blog!
