I meant to wait just a tad longer before I bombarded you with Autumn Awesomeness, but then I saw other super cool bloggers sharing pumpkin and apple-themed treats, which means it is totally fair game.
I snagged a fabulous bag of Granny Smith apples over at Aldi the other day, and I knew I wanted them in muffins…
but how exactly should they be included?
I’ve made apple muffins before with raw apples, and they are fine. Applesauce is a great addition too, but then you don’t get any real chunks of apple up in your muffin business…
and I think we all know I need real apples up in my muffin business. All day, every day.
So I came across the idea of caramelizing apples in butter and sugar, and a chorus of angels began to sing in my brain.
It could have been the multiple personas up in there (they all love apples) but I’m going to go with divine inspiration.
Friends, these are a tad more work than just dumping raw apples into your muffin mix, but it is oh so worth it.
They are bursting with caramel flavor and apple-icious goodness, and what’s more, I’ve topped them with a crumble.
APPLE CRUMBLE FOR THE WIN!
Ahem. I would say sorry about all of the shouting and weirdness, but I think you may
have learned to skip to the recipe be used to it by now.
I also whipped up some homemade apple pie spice to incorporate into the muffin mix and the crumble mix. I adore apple pie, and if I can work it in any way, shape, or form into my morning routine, I will.
In case you are worried about all that butter and sugar I caramelized the apples in don’t worry
be happy just eat them I also lowered the amount of sugar in the recipe and included whole wheat flour everywhere possible to give you a little fiber boost.

If you are into pears or peaches, I think they would also caramelize nicely for this recipe.
