So I survived my first day of teaching! Mostly.
I will admit to being extremely exhausted, but in the best possible way. It’s a little rough adjusting to the 9-5 schedule when you’re used to 11-4; but like I said, it’s a good kind of tired. I have an absolutely wonderful group of students who are getting into some amazing discussions about online identity and community and it looks like we are going to have a great session this summer!
With that said, let’s get straight to the focus of today’s post: Buttermilk Oatmeal Chocolate Chip Bread.
Your Truly is exhausted. Yours Truly has no time/no motivation to make breakfast when I stumble out of bed in the morning and run over to work. But I do have time to whip up this easy breakfast bread on Sunday afternoon to enjoy all week long!
You’ve got plenty of chocolate chips for a bit of sweetness and the buttermilk adds a moist and chewy texture to this hearty oatmeal bread.
Oh, and did I mention browned butter?
Yeah, there’s plenty of that all up in this bread as well. 🙂
If your weeks have been a bit harried, or it feels to warm to turn the oven on during the day, try whipping up this Buttermilk Oatmeal Chocolate Chip Bread one night to enjoy for days. It comes together in no time and is sure to be a major crowd-pleaser.
That, and it is absolutely divine when it’s dunked into your morning cup of coffee.
Alright folks: that’s all I have for you today. For now I plan to finish out my first week of teaching and then sleep for
the entire weekend a bit. I’ll be back on Tuesday with a recipe for a festive Greek Chicken Salad, so be sure to check back first thing that morning!
