I plan to bring you many of these delightful No Bake Cheesecakes in the upcoming months. True, it has been rather delightful here in the Northeast this week (I even turned the AC off last night!) but I know how this whole summer thing works.
Just when August rolls around, and the “Back to School” items show up in stores and remind me of the comfy wonder of sweaters and cardigans, the heat hits you in the face with a terribly humid wake up call. For this reason (and just since they are absolutely deliciously simple) I bring you Blueberry and Toasted Coconut No Bake Cheesecake.
I do give serious thought to the question “why on earth do we make cheesecake that needs to be baked?” when this no-bake version is just so ridiculously simple. It only requires a handful of ingredients and comes together in no time. Just a little patience is required for the mixture to set up, but it does become rather thick, creamy, and cheesecake-esque in a few hours.
“But Jess, traditional cheesecake is so pretty and you can cut it into gorgeous slices”
True. But friends, you can pipe this cheesecake into gorgeous glass containers and cover it with oodles of toasted coconut and fresh blueberries. I much prefer piping than fighting with one of those blasted spring-form pans. I don’t care how “airtight” they think they are; they inevitably leak and make for one very sad and cheesecake-less Jess.
ANDDDD no slicing necessary: you can
just pipe it directly into your mouth or eat it with a ladle just dig right in to your own personal portion of cheesecake with a spoon!
Also: traditional cheesecake means you need to turn on that awful contraption we call an oven.
Yep. You heard me.
The oven is an awful contraption in the summer. When it’s cool and crisp in the middle of October, or brisk and snowy in December, the oven is my best friend. Really, from the months of September through March, the oven and I are bffls.
But in August, we are sworn enemies.
So I say NAY!
Nay to frustrating spring-form pans. Nay to sauna-inducing temperatures.
YAY to no-bake desserts!
Well, there is a TEENY bit of baking in order to toast the coconut. But it’s only for five minutes. I swear it’s totally worth it!
