I have to apologize for being MIA last week; I sprained my wrist while moving furniture and couldn’t grab things, let alone bake or cook. It’s weird how much you realize you rely on one body part once you can no longer use it. (Shampooing your head with one hand is not an enjoyable experience.)
But my wrist has healed and I am back with these tropical cereal treats!
Oh, and I’m back with a little site-revamp as well! Since the site turned three years old a few weeks ago, I’ve been thinking about where I want to go with it. The past three years have been full of sweet treats and baked goods, and much of this was focused on me learning how to create recipes for marvelous muffins, fabulous fudge, creative cupcakes, and more.
I’ve loved every bit of it, but now it’s time to take my culinary education one step further. Though the desserts and baked goods aren’t going anywhere (other than my stomach), I think it’s about time for them to make room for experiments of the savory variety. I’ve posted savory dishes here and there, but it’s never been about learning skills or, more importantly, conquering fears.
One of the biggest additions to the blog, and the one I’m the most excited about, will be the “Fear No Food” section, where I will post about conquering my cooking-phobias. You can expect my quirky, spazzy self to brave cooking methods like deep-frying, braising, and poaching. I will (hopefully) master dumplings, homemade pastas, and whatever else pops into my mind.
And since the blog is “growing up” so to speak, I thought it was about time that the look and feel of the blog grow up a bit too. Just a bit though. A little less pinks and blues but no less fun, you know?
It’s not like I can stop randomly shouting at you in caps lock or using a ridiculous amount of ellipsis. What would even be the point of talking to you then?!
It should be lots of fun and I hope you’ll stick around for the ride!

This week I bring you a super simple, no-bake dessert that puts a tropical spin on the classic Rice Krispie Treat. Just swap out the rice krispies for Crunch Berries, throw in some shredded coconut, and poof! Instant dessert in adorable portable form.
These Coconut Crunch Berry Cereal Treats will quickly become a summertime favorite. They come together in minutes and are a fun way to spend the afternoon (with or without little ones!).

Coconut Crunch Berry Cereal Treats
A super simple, no-bake dessert that puts a tropical spin on the classic Rice Krispie Cereal Treat.
Yields: 16 squares
- 1 1/2 tbsp butter
- 1 (10.5 oz) bag marshmallows
- 6 cups crunch berries cereal
- 1 cup shredded coconut
- Line a 9x13 inch pan with foil or parchment paper. Melt butter and marshmallows either a) in a medium saucepan over medium heat or b) in a large microwave safe bowl in 30 second increments.
- Once the butter and marshmallows have melted, remove from heat and quickly stir in crunch berries cereal and coconut until fully coated in marshmallow mixture.
- Press mixture evenly into prepared pan (careful the mixture will be warm/hot!) and let cool completely before cutting into squares and serving.
