Eggnog Coffee Crumble Cake

Hello friends!

THE SEMESTER IS OVERRRR!!!!

Well, sort of.

Classes are over (WOO) but finals are still approaching, and I am none too excited about that accounting exam. How do people even do that as a profession?! Its. So. Boring.

You know what’s not boring though? Coffee cake infused with eggnog and covered with an eggnog glaze. :D

How I love the holidays. I found this recipe over at How Sweet It Is and she even went so far as to call it “Breakfast Cake”. Friends, if this is breakfast for the next week, perhaps my finals won’t be so terrible.

Though I have to warn you, this recipe does take a little more work than ones I’ve been posting of late here on the blog.

I would highly suggest having every facet of the recipe, from the crumble down to the cinnamon brown sugar filling, ready to go before you start the main cake recipe. It just makes everything easier when your doing all that lovely flavor layering.

Oh another point I’d like to make. Perhaps I can’t measure my pans correctly (totally possible) but spreading the batter out into a 9 x 13 pan was really difficult. It just seemed like it should have gone in a slightly smaller pan?

But then it bakes up HUGE so what do I know. Just do your best to create layers, instead of just making a big ole’ mess like I did where you can barely see the cinnamon layer once the cake is baked.

Or hide your mistakes under a lovely thick crumb topping! Whichever is easier :)

Oh and do not skip out on this glaze! Seriously, when the cake comes out you poke holes all over it with a toothpick and drizzle this over it…

With an eggnog latte you may venture into Christmas cheer-overload, so consume wisely! Heehee or if you’re like me and can’t say no, just dig in.

Eggnog Coffee Crumb Cake

Slightly Adapted from How Sweet It Is

for the cake:

2 cups flour
1 tbsp baking powder
1/4 tsp salt
1/2 tsp nutmeg
1/2 cup brown sugar, loosely packed
1/3 cup white sugar
2 eggs
1 tsp vanilla
6 tbsp melted butter
1 cup eggnog

for the brown sugar/cinnamon filling:

1/3 cup brown sugar
1/4 tsp cinnamon

for the crumb topping:

1/3 cup flour
1/3 cup brown sugar
1/4 tsp cinnamon
2 tbsp melted butter

for the glaze:

1/3 cup eggnog
1/2 cup brown sugar
1/4 cup white sugar
1 tsp vanilla
pinch of nutmeg

1. Preheat the oven to 350 degrees and grease one 9×13 inch pan with cooking spray.

2. Make the brown sugar cinnamon filling by combining brown sugar and cinnamon. Set aside until ready to use. Make the crumb topping by combining all crumb ingredients with fingers until mixture resembles coarse crumbs. Set aside until ready to use.

3. For the cake: combine flour, baking powder, salt, and nutmeg in a medium bowl. In a separate larger bowl, whisk butter and sugar until smooth. Whisk in eggs, one at a time, until fully incorporated, followed by the vanilla.

4. Stir dry ingredients into wet ingredients until a batter forms, then stir in eggnog until mixture is smooth and uniform.

5. Pour half the batter into the prepared pan, then cover with brown sugar cinnamon mixture. Cover with rest of batter (it’s okay if some brown sugar shows) then top with crumble mixture.

6. Bake at 350 for 30-35 minutes or until toothpick inserted in center comes out clean. While cake bakes, prepare glaze.

7. For the glaze: Whisk together all glaze ingredients in a small saucepan over medium heat and allow to come to a boil. Reduce heat and let cook 1-2 minutes. Remove from heat and set aside until ready to use.

8. When cake is done, remove from oven and poke all over surface with a toothpick. Then pour the glaze over the still hot cake. Let cool.

  1. Crumble, did I see the word crumble? Why indeed I did. This cake looks spectacular and I love the flavour combo too- even if I dislike coffee myself, the giant man-baby will love this! And yay on the semester being over, good luck with your finals!

  2. Jess, this looks amazing! I love that you write about so many eggnog recipes. It’s my mom’s favorite, and since she’s the only one who drinks it, we always have nearly a full bottle left over. I can’t wait to bake this (Christmas morning, anyone?)!
